Last night I made vanilla-orange cupcakes with orange buttercream frosting. This is the basic yellow cupcake recipe from VCTOTW with orange flavor added. They turned out beautifully and people seemed to like them, including my super-picky "I fear your vegan foods" roommate, who said they were like creamsicles in cupcake form.

On the down side, they didn't come out of the molds well. I think I may have to invest in aluminum muffin molds and actual cupcake papers. My resistance to this isn't in cleaning the molds, though the silicon ones are wonderful for that, but in the papers, since with the silicon molds I can reduce waste a little.

and now I will talk a bit about veg stuff and why I dig this cupcake thing so much. )

I still have a fair chunk of the coconut lime frosting left over, like enough that I'd feel bad throwing it out. Anyone got ideas for something I can do with it?

Also, note to anyone looking to make those particular cupcakes - you may want to halve the frosting recipe, as I put tons of frosting on and still have lots left over and it is very, very sweet.

On the down side, the binding on my copy of Vegan Cupcakes has let go of a number of pages. It's still usable, but this is the fourth recipe and the pages are coming out. Boo.

Last night I made brooklyn brownie cupcakes from Vegan Cupcakes Take Over The World. These are chocolate with cherry preserves and bourbon.

What I used: Jack Daniels because that's what was in front and I didn't know there was a bunch of other whiskey behind it. The cherry preservers are Dalfour, and quite nice. There's about enough left in the jar for another batch, which is good because I like jam very sparingly.

Equipment: again I went with the silicon molds because I want to find out for sure that they don't work for cupcakes before investing in a whole other set of molds as they are not free and all that.

Things I did that maybe weren't a great idea: I thought to myself, well, it says 15 cupcakes but I can just make 12 big ones. Yeah, not so much. They don't puff up like muffins, they spread out. Cupcakes are thin batter, muffins thick. The muffins I make are close to dough (and are completely awesome, but that's for another post). They spread out and they were very soft and didn't come out of the molds cleanly, so I still don't know whether the molds are a factor in this, because it happened when I made the rum-date ones too but I wasn't watching the oven temperature carefully then like I did yesterday. More experimentation required.

Outcome: delicious. I liked them, the vegetarians liked them, the omnivores liked them. Or everyone else is a lying liar besides me and [livejournal.com profile] serafina_payne. Also, I still have 4 left, oh yes.

The margarita cupcakes were okay but not fantastic. I can't compare them to actual margaritas because I don't know if I've ever had one. Somehow the lime and tequila evened out to taste lemony. [livejournal.com profile] dan4th said they were like office cake.

Next time, chocolate.
